Meals Without the Work


​​Hi Reader,

Last week we had a flood in the house, today I woke up to a completely flat tire, and I have about 6 loads of laundry I need to do. December always feels like it’s survival not thrival (not a word… I know…but it rhymed) but I’m feeling it extra deeply right now!

So I’m pulling out a few of my favorite easy dinner recipes so that we don’t just survive off boxed mac and cheese and nuggets for the foreseeable future. Hope they help you during this chaotic season too!

Easy dinners my whole family loves

  1. Fall apart chuck roast - this one needs a few hours in the oven but it’s SO simple to throw together. I skipped the broiling step and it was still great. I served it with some baked potatoes that I threw in for the last 90 minutes in the oven, and green beans!
  2. Air fryer chicken wings - these are now in our weekly meal rotation! They come out perfectly and I usually serve them with some cut up raw veggies and microwave rice.
  3. Easy tomato soup - this is the only soup my kids reliably eat so I make it often! Of course we pair it with some grilled cheese. (When I really don’t have time I buy boxed tomato soup at the store. That’s fine too!)
  4. Korean beef rice bowls - just as easy as tacos but a fun change in flavor!
  5. Spaghetti casserole - dump and bake!!

Muffins from Mama Knows

Mini Blueberry Muffins

While I grew up on boxed blueberry muffins (hey, nothing wrong with a pre-made mix every now and then), I want to recreate the same blueberry muffin nostalgia for my family with a recipe that is kid-friendly (read also: lower in added sugar) and with a little added nutritional value. They also have a hemp seed streusel topping for a sweet crunch and a little boost of fat and protein!

Berry Banana Muffins

These muffins are a favorite for BLW, but the flavors are perfect for big kids too!

Pumpkin Muffins

If you want to keep fall going a little longer, or just have leftover pumpkin to use up, you’re going to love these. These low-sugar pumpkin muffins are perfect for handheld snacking and will have your kitchen smelling like your favorite fall candle.
