GRILLING WITHOUT THE GRILL

I'm not the grill operator in our house, so I found this hack that makes chicken crispy on the outside and juicy on the inside, without using the grill!

I made it last night, and served it with roasted sweet potato wedges and mac and cheese! (If you don't have an air fryer, I really couldn't imagine living without it!)

  • 1¼ pounds boneless, skinless chicken thighs
  • 2 tsp olive oil
  • ¾ - 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika

If using table salt, reduce to ½ teaspoon.

Instructions

  1. Preheat the air fryer to 400°F.
  2. Pat chicken thighs dry.
  3. Toss with olive oil.
  4. Sprinkle with salt, pepper, onion powder, and paprika, coating both sides evenly.
  5. Air fry at 400°F for 10–14 minutes, flipping halfway through, until the thickest part reaches 165°F.
