PB Chocolate Chip S'mores Cookies

You'll never believe these are healthier than a traditional cookie but they have no butter or oil – yet my family absolutely crushed them and asked for more!

Ingredients:

  • 1/4 cup rolled oats
  • 1/4 cup unbleached all-purpose flour
  • 1/4 tsp salt (I used fine sea salt)
  • 1/2 tsp baking powder
  • 1/3 cup brown sugar
  • 1/2 cup creamy natural peanut butter, unsalted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3 Tbsp mini chocolate chips
  • 1/4 cup mini marshmallows
  • 12 graham cracker small rectangles (3 full graham cracker sheets, broken into 4 pieces)
  • Flaky sea salt for topping

Directions:

  1. Preheat oven to 350°F and line a baking sheet with parchment.
  2. Put mini marshmallows in freezer (helps keep them from melting in baking)
  3. Whisk together oats, flour, salt, baking powder, and brown sugar.
  4. Stir in peanut butter, egg, and vanilla until a soft dough forms.
  5. Fold in chocolate chips and mini marshmallows, saving a few of each for topping.
  6. Arrange graham cracker squares on the baking sheet.
  7. Scoop about 1½ Tbsp dough onto each graham cracker square and gently flatten.
  8. Bake for 9–10 minutes.
  9. Remove from the oven and quickly press a few remaining marshmallows and a couple chocolate chips onto the tops.
  10. Return to the oven for another 1–2 minutes, until the cookies are just set around the edges.
  11. Add a sprinkle of flaky sea salt over the tops.
  12. Cool on the pan for at least 10 minutes.
