I lied!


Hi Reader,

Has anyone solved the problem of strawberries growing mold if you don’t eat them five seconds after you get home from the grocery store??

I swear I inspect every carton like I'm on a forensic investigation, looking for even the tiniest hint of mold.

And somehow...they still seem to go bad overnight. 😩

This week I caught them just in time and turned them into a recipe my kids (and Ben!) absolutely loved.

It's one of those recipes that's almost effortless—you just need to be home for a few hours while it slowly bakes in the oven.

One more thing...

I owe you a correction.

If you saw me mention this recipe on Instagram, I accidentally said it had no added sugar. Total brain fart. 🤦🏻‍♀️

It actually contains a little honey—about 1 gram of added sugar per strip—which isn't something I'd worry about at all.


Here's the recipe:

Ingredients

  • 3 cups of destemmed strawberries
  • 2 tsp lemon juice
  • 1 tbsp honey or maple syrup

Instructions

  • Preheat your oven to 170℉
  • Add your fruit to a blender or food processor and puree until smooth (remove stems if using strawberries)
  • Pour your pureed fruit mixture in a medium saucepan, add sweetener and lemon juice, and cook over medium heat for 10-12 minutes, stirring occasionally. You want it to get a little bit thicker like you’re making jam
  • Pour your pureed mixture onto a baking sheet lined with parchment paper, spread it out so that it is a thin layer covering your baking sheet
  • Bake for up to 4 hours (begin checking around 3 hours) – you want your fruit mixture to be just a little bit tacky – similar to the texture of a fruit roll up/fruit leather. The exact time will depend on the thickness of your mixture and the temperature of your oven.
  • Let cool until room temperature and use a pizza cutter to cut in fruit roll up strips.
  • Roll each strip, and enjoy!

Storage note: Store on the counter for 3 days in an airtight container, or in the refrigerator for 1-2 weeks.
